Structure the evening backwards from sunset. You want your final 90 minutes on the water to cover golden hour through dusk — roughly a 5–9pm charter in summer, 2–6pm in winter (our month-by-month guide has the seasonal details). The first hours are for cruising and a swim stop if the season's right; then your captain positions off Pass-a-Grille, bow to the open Gulf, for the main event. Charters are BYOB, which for a date night is a feature: bring the exact bottle you'd order and skip the restaurant markup. Couples typically go one of three ways — a charcuterie and champagne spread, takeout from a favorite spot handed to the crew at boarding, or a properly catered dinner served on the aft deck. A weekday evening charter runs $500/hour with a 4-hour minimum — $2,000 for the entire yacht, captain, and crew. Weekends are $600/hour, and the 5-hour weekend sunset slot ($3,000) is the first thing on the calendar to sell out. The Evening, Hour by Hour
Here's how a summer 5 to 9pm date night actually runs. You arrive at our private St. Petersburg marina about 15 minutes early, park steps from the slip, and hand the crew whatever you brought. Shoes come off at the boarding step. After a five-minute safety briefing, lines come off and the first hour is the easy cruise: skyline sliding past, drinks poured, your playlist on the Bluetooth stereo. Hour two, if the water's warm, is the swim stop, with the swim platform down and the crew handing towels up as you climb out. By hour three your captain is repositioning off Pass-a-Grille, bow to the open Gulf, and dinner comes out on the aft deck while the light goes gold. The last hour is the show itself and the slow ride home in the dark, which couples consistently tell us was the best part.
Winter compresses the same evening into an afternoon slot. Sunset comes before 6pm from December through February, so a 2 to 6pm charter catches full golden hour and still gets you back in time for a late dinner ashore. The water dips into the low 60s, so most couples skip the swim, but winter also brings the clearest water and the calmest glass behind each cold front.
What to Bring for a Night on the Water
Less than you think. The boat already has coolers, ice, a full galley with a refrigerator, and Starlink WiFi, and the crew handles everything nautical. Your list: the bottle you actually want to drink (cans and plastic on deck, no glass), the food, a towel each if you're swimming, and a light jacket or wrap, because the breeze picks up after sundown and the flybridge feels cooler than you'd expect. Skip the heels entirely. Decks are barefoot or soft-soled shoes only, and honestly, barefoot is the better date anyway. Weekday or Weekend?
For couples specifically, weekdays are the sleeper pick. The same yacht, crew, and sunset run $500/hour Monday through Thursday against $600/hour Friday through Sunday, which is $400 back in your pocket over four hours, and the water off Pass-a-Grille is noticeably quieter without the weekend boat traffic. If the date has to be a Saturday, book early: we recommend 2 to 4 weeks ahead for weekends, and in spring the weekend sunset slots go two to three weeks out. A 50% deposit holds the date, with the balance due 7 days before departure.
Turn One Night Into a Weekend
